Whiskey is distilled from beer, which is fermented from grain. Though other grains are used, barley should be considered the default grain used in making both beer and whiskey. The vast majority of all types of whiskey are made with at least some barley. Barley has earned its postion at the core of whiskey through its diastatic power of fermentation. Barley's big, round, buttery-porridge flavor is at least part of the flavor for almost every type of whiskey.

A trend has emerged in America of producing whiskey of types that formerly always were fermented by the use of malted barley now with little barley, or none at all. These supermajority whiskies are sometimes made with liquid enzymes instead of malted barley. This is perfect for making less-expensive whiskies that will have none of the flavor most traditionlal to whiskies for a mllenium. They are perfect for those who mistakenly believe that the barrel is the main flavor of whiskey.

Now you know my bias. I don't think you could form a better one.

Other grains are used, sometimes without the assistance of barley, to make alternative sorts of whiskey. Whether such is a pure-rye Monongahela-style whiskey or the expensive plaything of Asian millionaires, Kweichow moutai, I will admit that worthy whiskies without barley do exist.

Kindly note: I do not let bureaucrats, nor the corporate types who lobby them to allow inferiror products, tell me what whiskey is. If you want to present me with some paragraph of regulation, you have missed the culinary truth of what I am doing.
