Whiskies
Whiskey is distilled from beer, which is fermented from grain. Though other grains are used, barley should be considered the default grain used in making both beer and whiskey. The vast majority of all types of whiskey are made with at least some barley. Barley has earned its postion at the core of whiskey through its diastatic power of fermentation. Barley's big, round, buttery-porridge flavor is at least part of the flavor of almost every type of whiskey.
A trend has emerged in America of producing whiskey of types that formerly always were fermented by the use of malted barley now with little barley, or none at all. These supermajority whiskies somethimes are made with liquid enzymes instead of malted barley. This is perfect for making whiskies that will have none of the flavor most traditionlal to whiskey for a mllenium.
Other grains are used, sometimes without the assistance of barley, to make alternative sorts of whiskey. Whether such is a pure-rye Monongahela-style whiskey, a Sherry-aged rice whisky from Japan, or the expensive plaything of Asian millionaires, Kweichow moutai, worthy whiskies without barley do exist.
