History
Virtually all Irish whiskey was pot-distilled from smoke-malted-barley, using peat as fuel, and not blended – neither with other single whiskies, nor grain spirit – until the second half of the nineteenth century. It was then that smoke-malting with peat was set aside by most Irish distilleries. It was about the same time that many Irish whiskies were also first triple-distilled. These changes established the cleaner and lighter flavor now usually associated with Irish whiskey.
