Spirits
Spirits are liquors in their distilled form, usually with water added for down-proofing, and perhaps aged in wood.
See the proofing and aging page.
Direct spirits are distilled for their flavor from fermented ingredients. Direct spirits fall under three categories: those distilled from wines, those distilled from beers, and those distilled from taadies.
DIRECT SPIRITSGeist spirits are distilled for their flavor from unfermented ingredients (usually after first macerating them in neutral spirits before secondary distillation). Geist spirits include gin, esprit d'absinthe, Lebanese arak, some French eaux de vie, and anything from Germany including the word geist in the product name.
GEIST SPIRITSNeutral spirits are distilled at such high proof, and often additionally filtered, that they carry no flavor, nor aroma, from the original ingredients. Modern unflavored vodka and neutral grain spirit are obvious examples of neutral spirits.
