Neutral Spirits are distilled at high efficiency to remove virtually all unwanted compounds, such as heads, tails, and sulfer compounds. Doing so also removes the aromas and flavors that make other types of spirits desirable.

Because the process can remove virtually all of the character from the fermented ingredient, selection of that fermented ingredient is often seen as of little consequence. Hence the various sorts of inexpensive ingredients (ugly fruit unfit for sale, potato, rye, et cetera) historically used to make vodka.

Neutral spirits fall under two categories: those that are left high-proof and are mostly used by industry (such as in the making of flavoring extracts, blending most Scotch whisky, geist maceration, and compounding many American liqueurs), and those further purified and down-proofed for sale as vodka.


Industrial Neutral Spirits are often retricted from sale to the public, and are not much purchased even where they are alowwed. Everclear is one such product in the U.S.A.
