True Rums
True rums are distilled from treacle taadi (fermented molasses). Treacle, or molasses, is sugarcane sap that has been boiled – usually to extract sugar.
True rums of different types are produced.
Robust Rum is typically pot-distilled from long-fermented, dundered, and mucked, molasses taadi. This produces the high-ester, intense, rummy flavor classically found in many rums of centuries ago.

Medium Rum is typically pot-distilled from quick-fermented molasses that may have been dundered, but never mucked. This produces medium-ester, moderately-rummy flavor.

Blended Rum is made of light rum mixed with a smaller amount of medium rum, or robust rum, to create a blended rum of intermediate flavor.

Light Rum is typically highly column-distilled from quick-fermented molasses taadi. This produces low-ester rum almost devoid of rummy flavor – which allows aging to introduce barrel flavor more quickly.
